Every country has it's national authentic food that somehow reflects the historical development and the natural fruits and vegetables available in that country. Today, thanks to my friend Ivana that motivate me to write this post, I will speak about the Lithuanian cold beet soup (šaltibarščiai)- A real pink adventure. This soup probably originated in the Grand Duchy of Lithuania, which comprised the territories of modern-day Lithuania and Belarus, and it is still part of the culinary traditions of these and neighboring nations. The Lithuanian language is the only one in the region which actually refers to it as 'cold borscht' (šaltibarščiai). In Belarusian it is known simply as khaladnik, or 'cold soup'; in Polish as chłodnik litewski, or 'Lithuanian cold soup'; and in Russian as svekolnik, or 'beetroot soup'. Namely, in the summertime, cold borscht is a popular alternative to the aforementioned variants, which are normally served hot. It consists of beet sour or beet juice blended with sour cream, buttermilk, soured milk, kefir or yogurt. The mixture has a distinctive pink or magenta color. It is served refrigerated, typically over finely chopped beetroot, cucumbers, radishes and green onion, together with halves of a hard-boiled egg and sprinkled with fresh dill. And the cooking party can begin. First you need to boil the potatoes. In meanwhile you should blend the kefir and beets in a blender, season with salt and pepper. You may need quite a bit salt as the beets give a lot of sweetness and adding salt will balance it, so add it according to your taste. Stir in the diced cucumber. Divide between plates and serve with a dollop of crème fraiche, a few slices of egg and generously sprinkled with chives, dill, and potatoes on the side. So, just mix all the ingredients (except eggs and potatoes) in a large bowl or pot. If using canned beets, you can add extra juice to make the color brighter pink if you wish. Place one egg cut in half in a bowl, ladle the soup on it. And don’t forget the most important…. Invite your friends, play music and enjoy it!
